Ingredients:

  • 1/2 cup unsalted butter, plus extra for greasing

  • 6 oz bittersweet chocolate, chopped

  • 2 eggs

  • 2 egg yolks

  • 1/4 cup granulated sugar

  • 1/8 teaspoon salt

  • 2 tablespoons all-purpose flour

  • Powdered sugar for dusting (optional)

  • Vanilla ice cream or fresh berries for serving (optional)

Instructions

  • Preheat the Oven: Preheat your oven to 450°F (230°C). Grease four 6-ounce ramekins with butter and place them on a baking sheet.

  • Melt the Chocolate and Butter: In a microwave-safe bowl, combine the butter and chopped chocolate. Microwave in 30-second intervals, stirring after each, until the mixture is completely melted and smooth. Set aside to cool slightly.

  • Prepare the Batter: In a separate bowl, whisk together the eggs, egg yolks, sugar, and salt until the mixture is thick and pale. Slowly pour in the melted chocolate mixture, whisking constantly to combine. Gently fold in the flour until just incorporated.

  • Fill the Ramekins: Divide the batter evenly among the prepared ramekins.

  • Bake the Lava Cakes: Bake in the preheated oven for 10-12 minutes, or until the edges of the cakes are firm but the centers are still soft. Remove from the oven and let the cakes sit for 1 minute.

  • Serve: Carefully run a knife around the edges of the ramekins to loosen the cakes. Invert each cake onto a serving plate and dust with powdered sugar if desired. Serve immediately with vanilla ice cream or fresh berries.
