Ingredients:

  • 1 ½ cups all-purpose flour

  • 3 ½ teaspoons baking powder

  • 1 teaspoon salt

  • 1 tablespoon white sugar

  • 1 ¼ cups milk

  • 1 egg

  • 3 tablespoons melted butter

  • 1 teaspoon vanilla extract (optional)

Instructions

  • Mix the Dry Ingredients: In a large bowl, whisk together the flour, baking powder, salt, and sugar.

  • Add the Wet Ingredients: Make a well in the center of the dry ingredients and pour in the milk, egg, melted butter, and vanilla extract (if using). Mix until just combined; the batter should be slightly lumpy.

  • Heat the Griddle: Heat a griddle or large non-stick skillet over medium heat. Lightly grease with butter or cooking spray.

  • Cook the Pancakes: Pour about ¼ cup of batter onto the hot griddle for each pancake. Cook until bubbles form on the surface and the edges look dry, about 2-3 minutes. Flip and cook the other side until golden brown, about 1-2 minutes more.

  • Serve: Transfer the pancakes to a serving plate and keep warm while you cook the remaining batter. Serve with butter, maple syrup, fresh fruit, or your favourite toppings.

Enjoy your fluffy pancakes! Experiment with different add-ins and toppings to create your perfect breakfast. Happy cooking!
